  • 1 cup (240ml) buttermilk

  • 1 cup (240ml) strong brewed coffee (room temperature)
  • For the Coffee Frosting:
  • 1 cup (226g) unsalted butter, softened
  • 3 cups (360g) powdered sugar
  • 1 tbsp instant espresso powder
  • 2 tbsp milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking soda, baking powder, and salt.
  3. In another bowl, whisk the eggs, buttermilk, oil, and vanilla extract until smooth. Slowly stir in the brewed coffee.
  4. Gradually add the wet mixture to the dry ingredients. Mix until the batter is just combined.
  5. Divide the batter evenly between the prepared pans. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cakes cool in their pans for 10 minutes before transferring to a wire rack to cool completely.
  7. Make the Coffee Frosting: Beat the softened butter until creamy. Add the powdered sugar a little at a time.
  8. Dissolve the espresso powder in milk, then pour it into the butter mixture with the vanilla. Beat until fluffy and smooth.
  9. Assemble and Frost: Place one cake layer on a serving plate. Spread a generous layer of frosting on top. Add the second layer and frost the top and sides.
