  • 3 tablespoons butter or margarine
  • 1 ½ cups milk, divided
  • 2 large eggs, lightly beaten
  • 1 lb (16 ounces) Velveeta cheese, cubed (1/2 inch size)
  • 8 ounces shredded Kraft Mild Cheddar Cheese, divided
  • 8 ounces shredded Kraft Monterrey Jack Cheese
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 350°F and lightly grease a 9×13-inch baking dish. Bring a large pot of salted water to a rolling boil, add the macaroni, and cook until al dente (about 7 minutes).
  2. Drain the macaroni thoroughly in a colander and set aside. In the same pot over medium-low heat, melt the butter, then add 1 cup of milk and stir to combine.
  3. In a separate bowl, whisk together the remaining ½ cup milk with the beaten eggs. Slowly pour this mixture into the warm milk-butter mixture, whisking constantly.
  4. Add the cubed Velveeta to the pot and stir continuously until completely melted and smooth. Gradually stir in most of the shredded cheddar and all of the Monterey Jack cheese until the sauce is velvety.
  5. Fold the cooked macaroni into the cheese sauce, ensuring every piece is coated. Season with salt and black pepper to taste.
  6. Transfer the macaroni mixture to your prepared baking dish and sprinkle the reserved cheddar cheese on top.
  7. Bake uncovered for 25-30 minutes until the edges are bubbling and the top is golden-brown. Let stand for 5-10 minutes before serving.
