- 2 cups elbow macaroni
- 4 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon ground mustard (optional)
Instructions
- Bring a large pot of salted water to a boil. Cook macaroni until just al dente. Drain and set aside.
- In a saucepan over medium heat, melt butter and whisk in flour. Stir for 1–2 minutes to form a roux.
- Slowly whisk in milk and cream. Cook, stirring, until thickened, about 5–7 minutes.
- Reduce heat. Add cheddar and mozzarella, stirring until fully melted and smooth. Season with salt, pepper, and mustard if using.
- Add macaroni to the cheese sauce and stir to coat completely.
- Serve immediately or transfer to a baking dish, top with more cheese or breadcrumbs, and bake at 375°F for 15–20 minutes until golden and bubbly.
