- 3 cups rolled oats
- 1 1/2 cups all-purpose flour
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 cup unsalted butter, softened
- 2 large eggs
- 1 cup raisins
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the rolled oats, flour, cinnamon, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Stir in the raisins.
- Press the dough evenly into the prepared baking pan.
- Bake for 23-27 minutes, or until golden brown.
- Let cool completely in the pan before lifting out using the parchment paper and cutting into bars.
