Ingredients

- 3/4 lbs ground ham
- 1/2 lbs ground pork
- 1 cup panko bread crumbs
- 3/4 cup milk
- 1 each egg
- 3/4 cup brown sugar
- 1/2 teaspoon dry mustard
- 1/4 cup red wine or apple cider vinegar
- 3/4 cup brown sugar for glaze
- 1/2 teaspoon dry mustard for glaze
Instructions
- Cube the ham into small cubes for even grinding.
- Process the ham in a food processor for 30 seconds, then scrape and pulse again for another 30 seconds until finely ground.
- Preheat your oven to 350°F.
- Spray a baking dish with non-stick cooking spray.
- In a large mixing bowl, beat the egg lightly.
- Add the ground ham, ground pork, bread crumbs, and milk into the bowl and mix well.
- Fold the ingredients together gently to maintain tenderness.
- Shape the mixture into small loaves and place in the baking dish.
- In a separate bowl, mix the glaze ingredients until dissolved.
- Brush the tops of the loaves with the glaze before baking.
- Bake for 30 minutes.
- After 30 minutes, brush the tops with half of the reserved glaze and continue baking.
- Once the bottoms are brown, remove from the oven, glaze and let rest for 20 minutes.
- Transfer to a plate, garnish if desired, and serve.
