Ingredients

  • 3/4 lbs ground ham
  • 1/2 lbs ground pork
  • 1 cup panko bread crumbs
  • 3/4 cup milk
  • 1 each egg
  • 3/4 cup brown sugar
  • 1/2 teaspoon dry mustard
  • 1/4 cup red wine or apple cider vinegar
  • 3/4 cup brown sugar for glaze
  • 1/2 teaspoon dry mustard for glaze

Instructions

  1. Cube the ham into small cubes for even grinding.
  2. Process the ham in a food processor for 30 seconds, then scrape and pulse again for another 30 seconds until finely ground.
  3. Preheat your oven to 350°F.
  4. Spray a baking dish with non-stick cooking spray.
  5. In a large mixing bowl, beat the egg lightly.
  6. Add the ground ham, ground pork, bread crumbs, and milk into the bowl and mix well.
  7. Fold the ingredients together gently to maintain tenderness.
  8. Shape the mixture into small loaves and place in the baking dish.
  9. In a separate bowl, mix the glaze ingredients until dissolved.
  10. Brush the tops of the loaves with the glaze before baking.
  11. Bake for 30 minutes.
  12. After 30 minutes, brush the tops with half of the reserved glaze and continue baking.
  13. Once the bottoms are brown, remove from the oven, glaze and let rest for 20 minutes.
  14. Transfer to a plate, garnish if desired, and serve.
