Creamy Lemon Orzo Skillet Salmon: Easy One-Pan Wonder


Ingredients

  • 4 (6 oz) salmon fillets
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 1/2 cups orzo pasta
  • 2 1/2 cups chicken or vegetable broth
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 2 cups fresh baby spinach
  • 1/4 cup Parmesan cheese, grated (optional)
  • Fresh parsley, chopped, for garnish
  • Lemon slices, for garnish

Instructions

  1. Season salmon fillets on both sides with salt, pepper, garlic powder, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Add salmon fillets skin-side down and sear for 4-5 minutes.
  3. Flip salmon carefully and cook for another 2-3 minutes until just cooked through.
  4. Transfer to a plate and cover loosely with foil.
  5. Reduce heat to medium and add butter to the skillet. Once melted, add minced garlic and sauté for 30 seconds.
  6. Pour in orzo pasta and stir for 1-2 minutes until lightly toasted.
  7. Add chicken broth, lemon juice, and zest. Bring to a simmer, reduce heat to medium-low and cook for 8-10 minutes.
  8. Stir in fresh spinach until wilted, then fold in Parmesan cheese if using.
  9. Return salmon fillets to the skillet, nestle them into the orzo, and warm for 1 minute.
  10. Garnish with fresh parsley and lemon slices before serving.
