- 1 lb ground pork or compliant sausage (sugar-free, nitrate-free)
- 1 tablespoon olive oil or ghee
- 1 medium sweet potato, peeled and shredded
- 1 small red bell pepper, diced
- 1 small zucchini, diced
- 1 cup baby spinach, chopped
- 1 small yellow onion, chopped
- 10 large eggs
- ½ teaspoon garlic powder
- ½ teaspoon dried thyme
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- Coconut oil or cooking spray (for greasing)
Instructions
- Set oven to 375°F (190°C). Grease a 9×13-inch baking dish with coconut oil or spray.
- In a skillet over medium heat, cook onion, bell pepper, and zucchini in olive oil for 5–6 minutes until softened.
- Add sausage and cook until browned, breaking apart as it cooks. Drain any excess grease.
- In a large bowl, mix shredded sweet potato, spinach, sausage, and veggies. Add garlic powder, thyme, salt, and pepper.
- In a separate bowl, beat eggs until smooth, then pour into the sweet potato mixture. Stir until well combined.
- Pour mixture into the baking dish and smooth the top. Bake for 35–40 minutes until the center is set and top is golden.
- Let rest 10 minutes before slicing. Serve warm or refrigerate for meal prep.
