Ingredients
- 1 bunch asparagus, trimmed
- 1 bunch radishes, trimmed and halved (some left whole for variety)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 tablespoons whole-grain mustard
- 1 tablespoon Dijon mustard
- 2 tablespoons red wine vinegar
- 1 garlic clove, minced
- 1/4 cup olive oil
- 1 teaspoon honey (optional, or maple syrup/agave for vegan)
- Salt and black pepper, to taste
Instructions
- Preheat your oven to 400 °F (200 °C).
- On a large baking sheet, arrange the trimmed asparagus and halved/whole radishes.
- Drizzle with 2 tablespoons olive oil and season with salt and pepper. Toss to coat evenly.
- Roast for 20–25 minutes, turning halfway through, until tender and lightly browned.
- While vegetables roast, whisk together whole-grain mustard, Dijon mustard, red wine vinegar, minced garlic, and 1/4 cup olive oil. Add honey if using. Season with salt and pepper. Whisk until emulsified.
- Transfer roasted asparagus and radishes to a serving platter. Drizzle with mustard vinaigrette.
- Serve warm or at room temperature.
