Ingredients

  • 1 lb lean ground turkey
  • 1 cup whole wheat breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • Zest of 1 lemon
  • 1 large egg
  • 1 cup diced vegetables (carrots & bell peppers)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup chicken broth

Instructions

  1. Lightly grease the crockpot with cooking spray.
  2. In a bowl, combine ground turkey, breadcrumbs, parsley, lemon zest, egg, diced veggies, garlic powder, onion powder, salt, and pepper. Mix until just combined.

  5. Cook on low for 6-8 hours or high for 3-4 hours until the internal temperature reaches 165°F.
