- 8 ounces elbow macaroni
- 4 slices of bacon, chopped
- 2 tablespoons unsalted butter
- 2 cups whole milk
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- ¼ cup breadcrumbs (optional, for topping)
- Chopped parsley, for garnish (optional)
Instructions
- In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove the bacon and drain on paper towels, leaving the bacon grease in the skillet.
- In the same skillet, melt the butter over medium heat. Once melted, add the milk and bring to a simmer.
- Stir in the garlic powder, onion powder, salt, and pepper. Mix well.
- Gradually add the shredded cheddar and mozzarella cheese, stirring continuously until melted and smooth.
- Add the cooked macaroni to the cheese sauce, stirring until well combined. If the mixture seems too thick, add a splash more milk to reach your desired consistency.
- Fold in the crispy bacon, reserving a little for garnish if desired.
- If you like a crispy top, sprinkle breadcrumbs over the mac and cheese and place under the broiler for 2-3 minutes until golden brown.
- Remove from heat and let cool for a few minutes before serving. Garnish with chopped parsley and reserved bacon if desired.
