Ingredients

  • 8 ounces elbow macaroni
  • 4 slices of bacon, chopped
  • 2 tablespoons unsalted butter
  • 2 cups whole milk
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • ¼ cup breadcrumbs (optional, for topping)
  • Chopped parsley, for garnish (optional)

Instructions

  1. In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove the bacon and drain on paper towels, leaving the bacon grease in the skillet.
  3. In the same skillet, melt the butter over medium heat. Once melted, add the milk and bring to a simmer.
  4. Stir in the garlic powder, onion powder, salt, and pepper. Mix well.
  5. Gradually add the shredded cheddar and mozzarella cheese, stirring continuously until melted and smooth.
  6. Add the cooked macaroni to the cheese sauce, stirring until well combined. If the mixture seems too thick, add a splash more milk to reach your desired consistency.
  7. Fold in the crispy bacon, reserving a little for garnish if desired.
  8. If you like a crispy top, sprinkle breadcrumbs over the mac and cheese and place under the broiler for 2-3 minutes until golden brown.
  9. Remove from heat and let cool for a few minutes before serving. Garnish with chopped parsley and reserved bacon if desired.
