  • 1.5 to 2 pounds boneless, skinless chicken breasts or thighs
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups cooked rice or cauliflower rice
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • Optional toppings: shredded cheese, avocado slices, sour cream, salsa

Instructions

  1. Gather all ingredients. Chop the onion and mince the garlic to prepare them for cooking.
  2. Place chicken breasts or thighs at the bottom of the slow cooker. Add black beans, corn, diced tomatoes with green chilies, chopped onion, minced garlic, chili powder, cumin, salt, and pepper. Stir gently to combine.
  3. Set the slow cooker to low and cook for 6 to 7 hours or on high for 3 to 4 hours until the chicken is tender and cooked through.
  4. Remove the cooked chicken and shred it with two forks. Return the shredded chicken to the slow cooker and stir to blend evenly with the other ingredients.
