Slow Cooker Chicken & Chorizo Stew is a hearty and flavorful dish that combines tender chicken with spicy chorizo and vegetables.

- 1 pound boneless, skinless chicken thighs
- 8 ounces chorizo sausage, sliced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 2 carrots, sliced
- 1 can (14.5 ounces) diced tomatoes, with juices
- 1 can (15 ounces) chickpeas, drained and rinsed
- 2 cups chicken broth
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, for garnish (optional)
Instructions
- Chop the vegetables and slice the chorizo. Set aside.
- In a skillet over medium heat, cook the chorizo for about 5 minutes until slightly browned. Remove from heat and set aside.
- In the slow cooker, add the chicken thighs, cooked chorizo, onion, garlic, bell pepper, and carrots.
- Pour in the diced tomatoes and chickpeas, followed by the chicken broth.
- Sprinkle in the smoked paprika, cumin, oregano, salt, and pepper. Stir to combine.
- Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
- Ensure the chicken is cooked through and tender. It should shred easily with a fork.
- If desired, shred the chicken in the pot using two forks and stir it back into the stew.
- Once cooked, taste and adjust seasoning as needed.

- This dish pairs well with rice or crusty bread.
- Store leftovers in an airtight container in the fridge for up to 3 days.
