A rich, comforting, slow-cooked soup with Italian sausage, cheese tortellini, spinach, and a silky creamy broth.
Ingredients

- 1 lb Italian sausage (browned)
- 1 onion (diced)
- 3 cloves garlic (minced)
- 14.5 oz diced tomatoes
- 4 cups chicken broth
- 1 tbsp Italian seasoning
- salt and pepper (to taste)
- 1 cup heavy cream
- 9–12 oz cheese tortellini
- 2 cups spinach (fresh)
Instructions
- Brown sausage in a skillet and drain excess fat.
- Add sausage, onion, garlic, tomatoes, broth, and seasonings to the slow cooker.
- Cook on LOW for 5–6 hours or HIGH for 2–3 hours.
- Stir in heavy cream and tortellini during the last 15–20 minutes.
- Add spinach and let wilt.
- Season to taste and serve hot.
