- 1 medium fresh eggplant, diced
- 1 medium zucchini, diced
- 1 medium yellow squash, diced
- 2 bell peppers (any color), diced
- 4 ripe tomatoes, diced
- 1 medium onion, thinly sliced
- 3 cloves garlic, minced
- 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
- 1/4 cup fresh basil leaves, chopped
- Salt, to taste
- Black pepper, to taste
- 3 tablespoons olive oil
Instructions
- Wash and dice the eggplant, zucchini, yellow squash, bell peppers, and tomatoes into bite-sized pieces. Mince the garlic and slice the onions thinly.
- Spread the onions and garlic at the bottom of the slow cooker, then add the chopped vegetables in layers.
- Drizzle olive oil over everything, and sprinkle with salt, pepper, and herbs.
- Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
- Once cooked, gently stir the ratatouille to combine fully and taste for seasoning.
- Serve immediately, or let it cool before refrigerating or freezing for later.
