These Smashburger Quesadillas are the perfect fusion of juicy smashed beef burgers and cheesy, crispy quesadillas. A quick, mouthwatering weeknight dinner that tastes like fast-food heaven made at home!

- 1 lb ground beef
- Salt and pepper, to taste
- 1 tsp garlic powder
- 1 small onion, finely diced
- 8 small flour tortillas
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups shredded mozzarella or American cheese
- 2 tbsp butter or oil for cooking
- Pickles (optional)
- Shredded lettuce (optional)
- Smashburger sauce (mayo + ketchup + mustard + relish)
Instructions
- Heat a skillet over medium-high heat. Add a small handful of ground beef directly onto the skillet and smash it flat using a spatula.
- Season the beef with salt, pepper, and garlic powder. Cook until browned and crispy on the edges.
- Add a spoonful of diced onion on top of the beef while cooking (optional).
- Place one tortilla over the smashed beef and press gently so it sticks.
- Flip the tortilla with the attached beef.
- Sprinkle cheese over the beef side, then top with a second tortilla.
- Cook until the cheese melts and tortillas turn golden and crispy.
- Repeat with remaining tortillas and beef.
- Slice into wedges and drizzle with smash sauce. Add pickles or shredded lettuce if desired.
