- 1 tsp baking soda
- 2 tsp ground ginger
- 1 tsp cinnamon

- 1/4 tsp nutmeg
- 1/4 tsp salt
- 3/4 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1 large egg
- 1/2 cup molasses
- 1 tsp vanilla extract
- Optional Decorations: Royal icing, chocolate chips, sprinkles
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
- In a large bowl, cream butter and brown sugar until light and fluffy.
- Beat in egg, molasses, and vanilla until smooth.
- Gradually add dry ingredients to wet ingredients to form a firm dough that won’t spread.
- Roll dough on lightly floured surface to 1/4-inch thickness and cut into gingerbread man shapes.
- Place cookies on prepared baking sheets about 1 inch apart.
- Bake for 8–10 minutes until edges are set but centers remain soft.
- Cool completely before decorating with icing, chocolate, or sprinkles.
