Description

  • 1 tsp baking soda
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 1/4 cup molasses
  • 1 tsp vanilla extract
  • Optional: coarse sugar or icing for decorating

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
  3. In a large bowl, cream butter and brown sugar until light and fluffy.
  4. Add egg, molasses, and vanilla, mixing until smooth.
  5. Gradually add dry ingredients to wet ingredients until a soft dough forms.
  6. Roll dough into 1–1.5 tbsp balls and place on prepared baking sheets, spacing 2 inches apart. Flatten slightly if desired.
  7. Bake 8–10 minutes until edges are set but centers are still soft.
  8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. Optional: decorate with icing or sprinkle with coarse sugar once cooled.
