- 1 ½ cups warm water (110°F)
- 2 ¼ tsp active dry yeast
- 1 tbsp granulated sugar
- 1 tsp salt
- 4 cups all-purpose flour
- 2 tbsp unsalted butter, melted
- 10 cups water (for baking soda bath)
- ⅔ cup baking soda (for baking soda bath)
- 1 egg yolk + 1 tbsp water (for egg wash)
- Coarse salt, cinnamon sugar, or Parmesan (optional)
Instructions
- In a large bowl, mix warm water, yeast, and sugar. Let it sit until foamy (about 5 minutes).
- Add salt, flour, and melted butter. Mix and knead for 8–10 minutes until smooth.
- Place dough in an oiled bowl, cover, and let rise for 45–60 minutes until doubled.
- Preheat oven to 425°F. Line baking sheet with parchment paper.
- Punch down dough and divide into 8 pieces. Roll each into a rope and shape into pretzels.
- Bring water and baking soda to a boil. Dip each pretzel for 20–30 seconds. Place on baking sheet.
- Brush with egg wash and sprinkle toppings. Bake 12–14 minutes or until golden brown.
