Ingredients

  • 1 ½ cups warm water (110°F)
  • 2 ¼ tsp active dry yeast
  • 1 tbsp granulated sugar
  • 1 tsp salt
  • 4 cups all-purpose flour
  • 2 tbsp unsalted butter, melted
  • 10 cups water (for baking soda bath)
  • ⅔ cup baking soda (for baking soda bath)
  • 1 egg yolk + 1 tbsp water (for egg wash)
  • Coarse salt, cinnamon sugar, or Parmesan (optional)

Instructions

  1. In a large bowl, mix warm water, yeast, and sugar. Let it sit until foamy (about 5 minutes).
  2. Add salt, flour, and melted butter. Mix and knead for 8–10 minutes until smooth.
  3. Place dough in an oiled bowl, cover, and let rise for 45–60 minutes until doubled.
  4. Preheat oven to 425°F. Line baking sheet with parchment paper.
  5. Punch down dough and divide into 8 pieces. Roll each into a rope and shape into pretzels.
  6. Bring water and baking soda to a boil. Dip each pretzel for 20–30 seconds. Place on baking sheet.
  7. Brush with egg wash and sprinkle toppings. Bake 12–14 minutes or until golden brown.
