- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- 4 cups chicken broth
- 2 cans (15 ounces each) white beans, drained and rinsed
- 1 can (4 ounces) diced green chilies
- 1 cup sour cream
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a large pot, heat olive oil over medium heat. Add the chicken breasts and cook until golden brown, about 5-7 minutes on each side. Remove and set aside.
- In the same pot, add the chopped onion and sauté until translucent, about 3-4 minutes. Then add the minced garlic and cook for another minute.
- Stir in the cumin, chili powder, and oregano. Cook for about 1 minute until fragrant.
- Pour in the chicken broth, then add the white beans and diced green chilies. Stir well to combine.
- While the broth is heating, shred the cooked chicken using two forks. Return the shredded chicken to the pot.
- Bring the mixture to a gentle simmer. Cook for 20-25 minutes, allowing the flavors to meld together.
- Stir in the sour cream until fully incorporated. Season with salt and pepper to taste.
- Ladle the chili into bowls and garnish with fresh cilantro and a squeeze of lime juice.
