Description

Crispy Sourdough Discard Garlic Herb Crackers offer a simple and flavorful way to use sourdough discard. These crackers are quick to make, perfect for snacking, and pair well with various dips and cheeses.

Ingredients

Scale
  • 1 cup sourdough discard
  • 3/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried rosemary or thyme
  • 1/2 teaspoon salt
  • Optional Toppings: cracked pepper, parmesan

Instructions

  1. Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. Mix the sourdough discard, olive oil, and herbs in a bowl until smooth.
  3. Add flour and salt to the mixture, stirring until a dough forms.
  4. Roll out the dough thinly, about 1/8 inch, between two sheets of parchment paper.
  5. Score the rolled dough into your desired cracker shapes using a knife or pizza cutter.
  6. Sprinkle extra salt or herbs over the dough, if desired.
  7. Bake in the preheated oven for 20–25 minutes until golden and crispy.
  8. Cool the crackers completely on a wire rack before storing them in an airtight container.

Notes

  • Store cooled crackers in an airtight container at room temperature for up to 1 week to maintain crunch.
  • For longer storage, freeze crackers in a single layer on a baking sheet, then transfer to a freezer-safe bag for up to 3 months.
  • Reheat in the oven at 350°F (175°C) for 5–10 minutes to restore crispness if they lose it.
  • Aim for a soft, non-sticky dough; add a little more flour if needed.
  • Ensure even thickness by rolling dough between parchment paper.
  • Experiment with different herbs and spices for customized flavor.
  • Start checking crackers at 20 minutes to prevent burning.
