Description

This Spicy Jalapeno Popper Chicken Soup is a comforting and flavorful dish that combines the creamy richness of jalapeño poppers with tender chicken in a hearty soup. It’s perfect for chilly evenings and offers a delightful spicy kick.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 large jalapeños, seeds removed and diced
  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • ½ cup crumbled bacon (optional)
  • Fresh cilantro or green onions, chopped, for garnish

Instructions

  1. Prep ingredients: Dice onion, mince garlic, chop jalapeños (remove seeds for less heat).
  2. Sauté aromatics: Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  3. Add garlic & jalapeños: Stir in garlic and jalapeños; cook for 2 minutes until fragrant.
  4. Cook chicken: Add chicken breasts and chicken broth. Bring to a boil, then simmer for 15 minutes until chicken is cooked through.
  5. Shred chicken: Remove chicken from the pot, shred it with forks, and return it to the pot.
  6. Add creamy elements & spices: Stir in heavy cream, cumin, paprika, salt, and pepper.
  7. Incorporate cheeses: Add cream cheese, stirring until smooth, then stir in shredded cheddar cheese. Add crumbled bacon if using.
  8. Simmer & adjust: Let the soup simmer for 5-10 minutes for flavors to meld. Taste and adjust seasoning as needed.
  9. Serve: Ladle the Spicy Jalapeno Popper Chicken Soup into bowls and garnish with fresh cilantro or green onions. Serve with crusty bread or tortilla chips if desired.

Notes

  • For a milder soup, remove all seeds and membranes from the jalapeños or use fewer peppers.
  • For a vegetarian version, substitute chicken with beans or cauliflower and use vegetable broth.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, adding extra broth if the soup becomes too thick.
  • Experiment with different cheeses like pepper jack, Monterey Jack, or smoked gouda for a flavor variation.
