Irresistible Spicy Maple Chicken with Coconut Rice Bowl


Ingredients

  • 1 lb chicken breast or thighs, cut into bite-sized pieces
  • 3 tbsp maple syrup
  • 2 tbsp sriracha (adjust to taste)
  • 1 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic, minced
  • 1 tsp ginger, minced
  • Salt & pepper to taste
  • 1 tbsp olive oil
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • Pinch of salt
  • Fresh cilantro, chopped (optional)
  • Lime wedges (optional)
  • Toasted coconut flakes (optional)
  • Sliced green onions (optional)

Instructions

  1. Whisk together maple syrup, sriracha, soy sauce, apple cider vinegar, minced garlic, and ginger in a small bowl.
  2. Season chicken pieces generously with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat until shimmering.
  4. Add the chicken pieces in a single layer and cook for 4-5 minutes on each side until golden brown and cooked through (165°F internal temperature).
  5. Add the sauce over the cooked chicken and reduce heat to medium-low.
  6. Simmer for 3-4 minutes, occasionally turning the chicken pieces until the sauce thickens.
  7. Combine jasmine rice, coconut milk, water, and a pinch of salt in a medium saucepan.
  8. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until liquid is absorbed and rice is tender.
  9. Fluff the rice with a fork and let it rest covered for 5 minutes.
  10. Place a scoop of coconut rice in each bowl, top with the glazed chicken pieces, and spoon extra sauce over everything. Garnish as desired.

  • The amount of sriracha can be adjusted based on your spice preference.
  • Let the chicken rest for a few minutes before serving for improved flavor.
