Irresistible Spicy Maple Chicken with Coconut Rice Bowl

- 1 lb chicken breast or thighs, cut into bite-sized pieces
- 3 tbsp maple syrup
- 2 tbsp sriracha (adjust to taste)
- 1 tbsp soy sauce
- 1 tbsp apple cider vinegar
- 1 tsp garlic, minced
- 1 tsp ginger, minced
- Salt & pepper to taste
- 1 tbsp olive oil
- 1 cup jasmine rice
- 1 cup coconut milk
- 1 cup water
- Pinch of salt
- Fresh cilantro, chopped (optional)
- Lime wedges (optional)
- Toasted coconut flakes (optional)
- Sliced green onions (optional)
Instructions
- Whisk together maple syrup, sriracha, soy sauce, apple cider vinegar, minced garlic, and ginger in a small bowl.
- Season chicken pieces generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Add the chicken pieces in a single layer and cook for 4-5 minutes on each side until golden brown and cooked through (165°F internal temperature).
- Add the sauce over the cooked chicken and reduce heat to medium-low.
- Simmer for 3-4 minutes, occasionally turning the chicken pieces until the sauce thickens.
- Combine jasmine rice, coconut milk, water, and a pinch of salt in a medium saucepan.
- Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until liquid is absorbed and rice is tender.
- Fluff the rice with a fork and let it rest covered for 5 minutes.
- Place a scoop of coconut rice in each bowl, top with the glazed chicken pieces, and spoon extra sauce over everything. Garnish as desired.
Notes
- The amount of sriracha can be adjusted based on your spice preference.
- Let the chicken rest for a few minutes before serving for improved flavor.
- Use fresh lime juice for extra zing.
