- 1 medium cauliflower head, chopped into florets
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons red curry paste
- 1 can (14 oz) coconut milk
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon turmeric
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon chili flakes (optional, for extra heat)
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
Instructions
- In a large pot over medium heat, sauté the diced onion for 4-5 minutes until soft and translucent.
- Add minced garlic and ginger and sauté for another 1-2 minutes until fragrant.
- Add the red curry paste, turmeric, cumin, cinnamon, and chili flakes. Cook for another 1-2 minutes to bloom the spices.
- Stir in the chopped cauliflower florets and vegetable broth. Bring to a simmer and cook for 15-20 minutes, or until the cauliflower is tender.
- Once the cauliflower is tender, pour in the coconut milk and season with salt and pepper. Simmer for another 5 minutes to meld the flavors.
- Use an immersion blender to blend the soup until smooth and creamy. Alternatively, carefully transfer the soup to a blender in batches.
- Taste and adjust seasoning if needed. Garnish with fresh cilantro or parsley before serving.
