  • 2 tablespoons red curry paste
  • 1 can (14 oz) coconut milk
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon chili flakes (optional, for extra heat)
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions

  1. In a large pot over medium heat, sauté the diced onion for 4-5 minutes until soft and translucent.
  2. Add minced garlic and ginger and sauté for another 1-2 minutes until fragrant.
  3. Add the red curry paste, turmeric, cumin, cinnamon, and chili flakes. Cook for another 1-2 minutes to bloom the spices.
  4. Stir in the chopped cauliflower florets and vegetable broth. Bring to a simmer and cook for 15-20 minutes, or until the cauliflower is tender.
  5. Once the cauliflower is tender, pour in the coconut milk and season with salt and pepper. Simmer for another 5 minutes to meld the flavors.
  6. Use an immersion blender to blend the soup until smooth and creamy. Alternatively, carefully transfer the soup to a blender in batches.
  7. Taste and adjust seasoning if needed. Garnish with fresh cilantro or parsley before serving.
