  • 1 poblano pepper, roasted, peeled, and chopped
  • 2 chipotle peppers in adobo sauce, chopped, plus 1 tablespoon adobo sauce
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • Optional: Fresh cilantro, chopped, for garnish

Instructions

  1. Press and crumble the extra-firm tofu.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the crumbled tofu to the skillet and cook, stirring occasionally, until lightly browned, about 5-7 minutes.
  4. Stir in the roasted poblano pepper, chopped chipotle peppers, adobo sauce, smoked paprika, cumin, garlic powder, and onion powder.
  5. Season with salt and black pepper to taste.
