Ingredients
- 2 1/4 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 cup sugar
- 1/2 teaspoon fine sea salt
- 3 tablespoons cold butter
- 1 cup whole milk
- 1 large egg
- 2 pounds fresh strawberries
- 1 1/4 cups sugar (for strawberries)
- 1 1/2 cups heavy whipping cream
- 1 tablespoon sugar (for whipped cream)
- 1 teaspoon vanilla extract
Instructions
- Hull and quarter the fresh strawberries. In a bowl, mix them with 1 1/4 cups of sugar and let sit for about 30 minutes to release their juices.
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine the all-purpose flour, baking powder, sugar, and fine sea salt. Stir to blend.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- In another bowl, whisk together the cold milk and the large egg. Pour this mixture into the dry ingredients and stir gently until just combined.
- Turn the dough onto a floured surface. Gently pat it down to about an inch thick. Use a round cutter to cut out shapes.
- Place the shortcake rounds onto the prepared baking sheet. Bake for about 15 minutes, or until golden brown. Let them cool slightly.
- While the shortcakes cool, beat the heavy cream with 1 tablespoon of sugar and vanilla extract until soft peaks form.
- Assemble the strawberry shortcake by slicing each shortcake in half horizontally. Drizzle the bottom half with some strawberry syrup, then add a generous amount of strawberries and a dollop of whipped cream. Cap with the other half.
