Tender chicken coated in a sweet and spicy chili sauce, perfect for an easy weeknight dinner.

- 1.5 lbs boneless, skinless chicken thighs (cut into bite-sized pieces)
- 2 tbsp vegetable oil
- salt and black pepper (to taste)
- 3 cloves garlic (minced)
- 1 tsp fresh ginger (grated)
- 0.5 cup sweet chili sauce
- 3 tbsp honey
- 1 tbsp soy sauce
- 1 tsp rice vinegar
- 1 tsp sesame oil
- 2 green onions (thinly sliced, for garnish)
- 1 tsp toasted sesame seeds (optional, for garnish)
Instructions
- Pat chicken pieces dry and season with salt and black pepper.
- Heat vegetable oil in a large skillet over medium-high heat. Add chicken and cook until golden brown on all sides, about 5–6 minutes. Remove chicken from skillet and set aside.
- In the same skillet, add minced garlic and grated ginger. Sauté for 30 seconds until fragrant.
- Add sweet chili sauce, honey, soy sauce, rice vinegar, and sesame oil to the skillet. Stir well and bring to a gentle simmer.
- Return chicken to the skillet, tossing to coat each piece in the sauce. Simmer for 3–4 minutes until chicken is cooked through and sauce thickens.
- Transfer chicken to a serving dish, garnish with green onions and sesame seeds. Serve immediately.
