- 1 cup sour cream
- 2 large eggs
- 1/4 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/4 cup yellow cornmeal
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg (optional)
- 1/2 teaspoon onion powder (optional)
- Fresh thyme leaves or chopped chives, for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish or a medium casserole dish.
- In a large mixing bowl, whisk together the melted butter, sour cream, and eggs until smooth.
- Stir in the drained whole kernel corn and the creamed corn until evenly distributed.
- In another bowl, whisk together the flour, cornmeal, sugar, baking powder, salt, and optional nutmeg and onion powder.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake uncovered for 45–55 minutes, until the top is golden and the center is just set with a slight jiggle.
- Let the corn pudding rest for 5–10 minutes before serving. Garnish if desired.

- For a savory corn pudding, reduce sugar and add cheese, bacon, or jalapeños.
- Use fresh corn kernels when in season for added sweetness and texture.
- The center should jiggle slightly when done to maintain a creamy texture.
