  • 1 cup sour cream
  • 2 large eggs
  • 1/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup yellow cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/2 teaspoon onion powder (optional)
  • Fresh thyme leaves or chopped chives, for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish or a medium casserole dish.
  2. In a large mixing bowl, whisk together the melted butter, sour cream, and eggs until smooth.
  3. Stir in the drained whole kernel corn and the creamed corn until evenly distributed.
  4. In another bowl, whisk together the flour, cornmeal, sugar, baking powder, salt, and optional nutmeg and onion powder.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  6. Pour the batter into the prepared baking dish and spread evenly.
  7. Bake uncovered for 45–55 minutes, until the top is golden and the center is just set with a slight jiggle.
  8. Let the corn pudding rest for 5–10 minutes before serving. Garnish if desired.
