  • 1 tablespoon Olive Oil
  • 2 tablespoons Chili Powder
  • 1 tablespoon Cumin
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Dried Oregano
  • 1/2 teaspoon Cayenne Pepper (or more, to taste)
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1/4 teaspoon Garlic Powder (optional)
  • 1/4 teaspoon Onion Powder (optional)
  • Pinch of Ground Cinnamon (optional)

Instructions

  1. Brown the Ground Beef: In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until it is browned and no longer pink. Drain off any excess grease from the pot.
  2. Sauté the Vegetables: Add the chopped onion and green bell pepper to the pot with the browned beef. Cook, stirring occasionally, until the onions become softened and translucent, about 5-7 minutes. Then, add the minced garlic and cook for another minute until fragrant.
  3. Combine Ingredients: Mix in the canned diced tomatoes (undrained), tomato sauce, and tomato paste. Add the drained and rinsed kidney beans and pinto beans. Stir in the chili powder, cumin, smoked paprika, dried oregano, cayenne pepper, salt, black pepper, and optional garlic powder, onion powder, and ground cinnamon.
  4. Simmer to Perfection: Pour in the beef broth. Bring the mixture to a gentle boil, then reduce the heat to low, cover the pot, and let it simmer for 30-45 minutes, stirring occasionally. For a thicker chili, remove the lid during the last 10-15 minutes of simmering. Taste and adjust seasonings as needed.
