These Tiramisu Cookies are soft, coffee-infused delights with layers of mascarpone cream and a dusting of cocoa powder. Inspired by the classic Italian dessert, they’re perfect for coffee lovers and make an elegant treat for any occasion!

- For the Cookies
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp instant espresso powder
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- For the Mascarpone Filling
- 1/2 cup mascarpone cheese
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- Optional: 1–2 tsp coffee liqueur
- For Topping
- Cocoa powder, for dusting
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together butter and sugar until light and fluffy, 2–3 minutes.
- Mix in egg, vanilla, and espresso powder until smooth.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients and mix until dough forms.
- Roll dough into 1-inch balls and place on prepared baking sheet, spacing 2 inches apart.
- Bake for 10–12 minutes, until lightly golden on edges. Cool completely on wire racks.
- Prepare mascarpone filling: beat mascarpone, powdered sugar, vanilla, and coffee liqueur (if using) until smooth and creamy.
- Sandwich cooled cookies with mascarpone filling.
- Dust tops with cocoa powder before serving.
Notes
- Store cookies in an airtight container.
- For a stronger coffee flavor, add more espresso powder.
- These cookies can be made a day in advance.
