- 1 lb ground turkey
- 1 can (15 oz) pumpkin puree
- 2 cans (15 oz) white beans (cannellini or great northern), drained and rinsed
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cinnamon (optional)
- 4 cups chicken or vegetable broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
Instructions
- In a large pot over medium heat, sauté the diced onion for 3-4 minutes until softened.
- Add minced garlic and cook for another minute until fragrant.
- Add ground turkey, breaking it up as it cooks. Cook for 5-7 minutes until browned.
- Stir in chili powder, cumin, smoked paprika, and cinnamon. Cook for 1-2 minutes to bloom the spices.
- Stir in pumpkin puree, white beans, and broth. Bring to a simmer and cook for 20-25 minutes, stirring occasionally.
- Add salt and pepper to taste. Garnish with cilantro or parsley and serve hot.
