  • 1 teaspoon vanilla extract
  • 3 tablespoons molasses
  • 3½ cups powdered sugar (420g)
  • 2 tablespoons milk (or more to adjust consistency)

Instructions

  1. Set oven to 350°F (175°C). Grease or line a 9×13-inch baking pan.
  2. In a large bowl, beat butter and brown sugar until light and fluffy. Add the egg and mix well.
  3. Stir in molasses until smooth.
  4. In another bowl, whisk flour, baking soda, salt, cinnamon, ginger, and cloves together.
  5. Gradually add dry ingredients to the wet mixture, mixing until combined.
  6. Slowly pour in the hot water while mixing; the batter will thin out.
  7. Pour into pan, smooth the top, and bake for 35–40 minutes, or until a toothpick comes out clean.
  8. Let the cake cool completely before frosting.
  9. Beat butter until creamy, then add vanilla and molasses. Gradually mix in powdered sugar, adding milk as needed for spreadable consistency.
  10. Spread frosting over cooled cake. Slice into squares or make mini tortes for a fun presentation.
