Instructions

  1. Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. Make the batter: In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, mixing well. Stir in the vanilla and red food coloring. In a separate bowl, whisk together flour, cocoa powder, and salt. Gradually add dry ingredients to the wet mixture, alternating with buttermilk. Stir in the baking soda and vinegar last.
  3. Fill liners about 2/3 full and bake for 18-20 minutes or until a toothpick comes out clean. Let cool in pan for 5 minutes, then transfer to a wire rack.
