  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 8 oz white chocolate, finely chopped
  • ½ cup mini chocolate chips
  • A few drops red food coloring
  • For the Whipped Cream Topping:
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon granulated sugar
  • For the “Sugar Blood” Rim:
  • ½ cup light corn syrup
  • ½ cup water
  • 1 cup granulated sugar
  • Red gel food coloring

Instructions

  1. Make the whipped cream: In a chilled bowl, combine heavy cream, vanilla extract, and sugar. Whip on medium-high until stiff peaks form. Set aside (chill if needed).
  2. Prepare the hot chocolate: In a medium saucepan, combine whole milk, heavy cream, vanilla, chopped white chocolate, and mini chocolate chips. Heat gently over medium-low, stirring occasionally until the chocolate melts and the mixture begins to simmer. Avoid letting it boil or burn. Stir in a drop or two of red food coloring (just enough to tint your cocoa). Pour into mugs.
  3. Create the sugar blood rim: In a small saucepan, combine water and corn syrup. Add sugar (do not stir). Heat over medium until the mixture reaches around 300 °F on a candy thermometer or until it bubbles thickly. Remove from heat and stir in red gel coloring quickly. Dip clean glass rims into the syrup, then invert so the sugar drips down the sides. Let it harden slightly.
  4. Assemble & serve: Top each mug of vampire hot chocolate with a generous dollop of whipped cream. Optionally, drizzle additional “sugar blood” over the cream for a dramatic effect. Serve immediately while warm.
