  • 1 cup vegan mozzarella shreds
  • 1 tablespoon Maille Dijon Originale Mustard
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 1 pinch black pepper
  • 1 sprig fresh thyme

Instructions

  1. Slice the Vegetables: Cut the onion in half and slice it thinly. Then, slice the cremini mushrooms.
  2. Sauté the Onions: Heat 1 tablespoon of olive oil in a skillet. Add the onions and stir-fry for 2-3 minutes. Sprinkle in the sugar and salt, add balsamic vinegar, and cook for 5 more minutes.
  3. Add the Mushrooms: Toss in the mushrooms, increasing the heat and cooking until they brown, about 8 minutes.
  4. Incorporate the Garlic and Thyme: Add minced garlic and thyme, cooking for 2 more minutes.
  5. Prepare the Oven: Preheat your oven to 400°F (200°C) and slice the baguette.
  6. Arrange the Baguette Slices: Place baguette on a baking sheet, brush with olive oil, and top with mozzarella.
  7. Toast to Perfection: Toast in the oven for 5 minutes until cheese is golden.
  8. Mix the Dressing: Whisk together mustard, olive oil, and balsamic vinegar.
  9. Assemble the Crostini: Top each baguette slice with the mushroom mixture, drizzle with dressing, season, and garnish with thyme.
