- 8 ounces cremini mushrooms

- 1 cup vegan mozzarella shreds
- 1 tablespoon Maille Dijon Originale Mustard
- 1 tablespoon extra virgin olive oil
- 1 teaspoon balsamic vinegar
- 1 pinch black pepper
- 1 sprig fresh thyme
Instructions
- Slice the Vegetables: Cut the onion in half and slice it thinly. Then, slice the cremini mushrooms.
- Sauté the Onions: Heat 1 tablespoon of olive oil in a skillet. Add the onions and stir-fry for 2-3 minutes. Sprinkle in the sugar and salt, add balsamic vinegar, and cook for 5 more minutes.
- Add the Mushrooms: Toss in the mushrooms, increasing the heat and cooking until they brown, about 8 minutes.
- Incorporate the Garlic and Thyme: Add minced garlic and thyme, cooking for 2 more minutes.
- Prepare the Oven: Preheat your oven to 400°F (200°C) and slice the baguette.
- Arrange the Baguette Slices: Place baguette on a baking sheet, brush with olive oil, and top with mozzarella.
- Toast to Perfection: Toast in the oven for 5 minutes until cheese is golden.
- Mix the Dressing: Whisk together mustard, olive oil, and balsamic vinegar.
- Assemble the Crostini: Top each baguette slice with the mushroom mixture, drizzle with dressing, season, and garnish with thyme.
