  • 1 tablespoon McKay’s Chicken Seasoning (can substitute with poultry seasoning)
  • 1/4 cup Pecan Meal (may substitute with almond meal)
  • 1/4 cup Oil (any neutral oil like canola)
  • 2 tablespoons Lemon Juice (substitute with vinegar if needed)
  • 2 tablespoons Corn Starch (can replace with arrowroot starch)
  • 2 cups Special K Cereal (use gluten-free options if needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9 x 13 inch pan with non-stick spray.
  2. Sauté the diced onion in vegan butter until translucent, about 5-7 minutes.
  3. Crumble the tofu into a large mixing bowl after draining it well.
  4. Combine the crumbled tofu with quick oats, Bragg’s Aminos, flour, McKay’s chicken seasoning, pecan meal, oil, lemon juice, corn starch, and Special K cereal.
  5. Fold in the sautéed onions gently, ensuring they are evenly distributed.
  6. Press the mixture firmly into the prepared baking pan.
