Ingredients

- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 1-inch piece fresh ginger, grated
- 2 teaspoons ground turmeric
- 3 medium carrots, sliced
- 2 celery stalks, diced
- 1 medium zucchini, diced
- 1 cup chopped kale or spinach
- 1 small potato, peeled and cubed (optional)
- 4 cups low-sodium vegetable broth
- 2 cups filtered water
- Salt and black pepper, to taste
- Juice of half a lemon (optional)
- Fresh parsley or cilantro for garnish (optional)
Instructions
- Heat olive oil in a large soup pot over medium heat. Add diced onion and sauté for 3–4 minutes until translucent.
- Stir in garlic and grated ginger, cook for 1–2 minutes until fragrant. Add turmeric and stir to combine.
- Add sliced carrots, diced celery, and potato (if using). Cook for 3–4 minutes to slightly soften.
- Pour in vegetable broth and water. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 12–15 minutes until veggies are tender.
- Stir in chopped zucchini and kale or spinach. Simmer for 3–5 more minutes until tender and vibrant.
- Taste and adjust seasoning. Add lemon juice if desired. Serve hot, garnished with parsley or cilantro.
