- 1 cup mochi rice flour
- 2 tablespoons granulated sugar
- 2 tablespoons water
Instructions
- In a medium microwave-safe bowl, combine the mochi rice flour and sugar.
- Add the water and stir until a dough forms. Knead the dough for 1-2 minutes until smooth and elastic.
- Divide the dough into 8 equal pieces. Flatten each piece into a round disc and place a watermelon cube in the center.
- Gather the dough around the watermelon, pinching and sealing to enclose the cube completely.
- Arrange the mochi on a parchment-lined baking sheet. Chill in the refrigerator for 30 minutes.
- Serve chilled and enjoy the refreshing combination of juicy watermelon and soft, chewy mochi.
