Ingredients
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 bell peppers, diced (green and red)
- 3 garlic cloves, minced
- 1 pound boneless, skinless chicken breast
- 1 tsp sea salt
- 1 tsp dried oregano
- 1 tsp paprika
- ¼ tsp chili powder
- ½ tbsp cumin
- ½ tsp black pepper
- 1 (15oz) can diced tomatoes, no-salt-added
- ½ cup chopped green chilies
- Fresh lime juice from 2 limes
- 4 cups chicken broth
- Optional Toppings: Freshly chopped cilantro, Diced red onions, Lime wedges, Avocado
Instructions
- Heat the olive oil over medium heat in a large pot. Add the diced onions, minced garlic, and diced bell peppers. Sauté until the onions become translucent and the bell peppers soften, about 5-7 minutes.
- Place the boneless, skinless chicken breast into the pot along with the canned diced tomatoes, chopped green chilies, sea salt, dried oregano, paprika, chili powder, cumin, black pepper, chicken broth, and fresh lime juice. Stir gently to combine all ingredients evenly.
- Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low to let the soup simmer uncovered for about 30 minutes, or until the chicken is thoroughly cooked and tender enough to shred easily.
- Remove the chicken breast from the pot and place it on a cutting board. Using two forks, shred the chicken into bite-sized pieces.
